Partnered with HIT Training, the leading specialist training and apprenticeship provider for the UK’s hospitality industry, the Brend Academy has trained more than 330 apprentices to date - representing more than a quarter of our workforce including managers here at Carlyon Bay!

Brend Hotels are proud to offer a range of academy programmes for hospitality hopefuls in Devon and Cornwall with a range of level 2, 3 and 4 courses available. Our selection of courses covers all aspects of hospitality and includes cheffing, customer service and hospitality management. So whether you are fresh out of school and considering an apprenticeship, looking to develop your skillset or would like a new challenge, our Brend Academy might just be what you are looking for.

Chef Academy | Level 2

Commis Chef Apprenticeship

Working as a commis chef is a great way of getting started in a kitchen; while it’s the most junior culinary role it provides a means of gaining hands-on experience learning a range of key skills. A commis chef is responsible for food preparation and also carries out basic cooking tasks under the supervision of a more senior chef.

Chef Academy | Level 3

Chef De Partie Apprenticeship

A chef de partie (also known as a section chef) is responsible for running a specific section of the kitchen such as fish, grill, saute or vegetable. In a large kitchen, this type of chef usually manages a small team of workers, who they must keep organised so that dishes go out on time and the work area remains clean and orderly. A chef de partie apprenticeship will give you the skills to run a section of a kitchen.

Hospitality Team Member

Although hospitality team members tend to specialise in an area, they develop fantastic ‘hospitality’ skills and knowledge such as recognising customer needs, knowing how to match them to the products and services of the business and working as part of a team to ensure that every customer, whether they are eating in a restaurant, drinking cocktails in a bar, ordering room service in a hotel or attending a business conference, feels welcomed and looked after.

Hospitality Academy | Level 3

Hospitality Supervisor

Hospitality supervisors work across a wide variety of businesses including bars, restaurants, cafés, conference centres, banqueting venues, hotels or contract caterers. They provide vital support to management teams and are capable of independently supervising hospitality services and running shifts, so the ability to think on their feet is important.

Hospitality Academy | Level 4

Hospitality Manager

Hospitality managers generally specialise in a particular area, however their core knowledge, skills and behaviours are aligned. Common to all managers in the hospitality sector is their passion for exceeding customers’ expectations.
